Here are some tips on how to make sure you buy good meat. The quality grade does not necessarily mean that you will be getting good meat. Some cuts of meat are just naturally more tender than others. You should look for cuts from the less used muscles along the back such as the rib and loin sections. The shoulder, flank and leg cuts will be tougher. Here are some tips on how to make sure you buy good meat. The quality grade does not necessarily mean that you will be getting good meat. Some cuts of meat are just naturally more tender than others. You should look for cuts from the less used muscles along the back such as the rib and loin sections. The shoulder, flank and leg cuts will be tougher. The USDA beef quality grade is like this prime, choice, select, standard, commercial, utility, cutter and canner. The best beef that you can find is of course prime, but this is very hard to find and does come with a large price tag. Most of the beef that you find at your local grocery will be choice, select or standard. Standard is usually sold as un-graded or as “brand name” meat Roast and steaks should be firm. Do not purchase soft or squishy feeling roast or steaks no matter the type of meat. Check the sale by date and no buy after that date. You should buy the meat either before or on the day that is the “sell by date”. Check the packaging for any type of damage. The meat should be cold and wrapped securely. The package should not contain any moisture. This could mean that the temperature of the meat has been above 40 degrees and that will cause the taste of your meat to be less quality. Look for beef that is bright red in color and has thin creamy white fat evenly distributed throughout the roast or steak. On the other hand, veal should not be bright red; it should be almost white in color or lightly pink. Before you buy any meat find out if it has been injected with flavorings. You do not want to purchase any meat that has been injected with flavorings, this can cause your meat to break down and become mushy. Do your own tenderizing. Do not buy meat that has been tenderized by the butcher. He uses piercing products that allows the natural flavor and juices to escape from your meat and this will be produce a tough and un-flavorful meal. Try to purchase dry aged if at all possible. This type of meat will probably only be found at a butcher shop. Dry aging is a process where the meat is taken from the bag that it arrives in to the butcher and is hung in a cooler for a certain amount of time to dry out. This will make the cost go up, but the aging adds more flavor and also tenderizes the meat. If you buy your steak from the local grocery, the steak has been cut, wrapped in plastic and has aged on the way to the store. When in doubt, talk with your butcher. He can answer all your questions regarding the different types of meat, cuts and may even have some great recipes for you to try. | |

In the beginning, it was John, Paul, George and Pete. Randolph Peter Best, or Pete Best, joined the Beatles in 1962. The Beatles, with Best on the drums, went to Hamburg, Germany and made the British flag proud. It was said that Pete Best was the most popular band member among women when they were still playing in Hamburg. When they got back to England, they started auditioning for record deals. They played for several record companies. They had their share of refusals. Finally, the Beatles auditioned for Parlophone, and the record company liked what they heard. The record company gave them a contract and asked them to cut some records. When the record producer, George Martin, heard the songs recorded by the Beatles, he decided to use a session drummer for the recording sessions. He didn’t like the way Pete Best’s drum sounded on the records. George Martin, according to later interviews, said that he only meant to use a session drummer for the recording session. The group could still have Pete Best as their drummer.. On August 16, 1962, Pete Best was fired from the Beatles almost two years from the day he joined the group to play a series of gigs in Germany. Today, Pete Best is still playing music. He has migrated to the US and has a group called The Pete Best Band. The band has several albums and singles under its belt. | What Causes Acid Reflux? Jan 13th 2012, 19:02 Encountering a bitter taste after savoring that yummy spicy chicken pizza is fairly common. But what if the bitter taste is a persistent thing? And worse, most of the times you often find the food particles back into your mouth every time you burp. Well, then you can be suffering from Gastroesophageal reflux disease or in simple plain English from acid reflux. So what is acid reflux? Acid reflux is a condition wherein the lower esophageal sphincter (LES) is not able to withhold the backflow of the stomach acid and other stomach contents into the esophagus. In normal circumstances, the lower esophageal sphincter acts like a valve that prevents the backflow of acidic juices and other contents of the stomach, allowing only the passage of food from the esophagus into the stomach. Whenever, it fails to perform its expected function, the acidic juices slip back into the esophagus. This causes irritation in the esophagus and the condition is then referred to as acid reflux. The other scientific name for acid reflux is Gastroesophageal reflux or GERD. There are many factors that can trigger acid reflux in a person. Diet is one of them. Since acid reflux is an ailment associated with the stomach, whatever that goes into the stomach is bound to create an effect on acid reflux. The fast food fad that is rapidly gaining importance in the urban dietary patterns is one major cause of acid reflux. Not only is fast food low in fiber and nutritional contents, but also is also very oily and spicy. Oily and spicy food can trigger off acid reflux in many cases. Similarly, beverages like soft drinks and juices made from citric fruits such as lime and orange are known to cause acid reflux. Drinks laden with caffeine are known to induce acid reflux. Consumption of alcohol or alcoholic beverages is also considered to be one of the causes of acid reflux. Alcohol is known for relaxing the lower esophageal sphincter’s muscle thus aiding in the escape of acidic juices into the esophagus. Alcohol when taken in large quantities also causes the irritation of the mucous membrane of the esophagus, thus inducing GERD. Similarly, smoking is also closely linked to acid reflux. Smokers produce half the saliva produced by non-smokers. Saliva contains bicarbonate that is known for neutralizing stomach acids. Smoking also relaxes the LES muscles. This increases the chances of getting acid reflux. Being over weight can also trigger off acid reflux. Normally more fat around the stomach region means more pressure around the stomach area, which pushes up the acidic juices into the esophagus and eventually leads to GERD. Pregnancy can also be attributed to causing acid reflux as there is an increase pressure near the abdomen.. Hiatus hernia is another cause of GERD. The diaphragm separates the chest from the stomach. Hiatus is a small hole in the diaphragm. Some times the hiatus weakens and enlarges. This allows the stomach to protrude into the chest. This causes disruption in the normal working of the LES, thus leading to acid reflux. These are the major causes of acid reflux.
